You know you need to eat your greens to get to the Emerald City. This soup gets you onto the yellow brick expressway… and it’s Autoimmune Protocol friendly!
Yield: 3 bowls full
- 1 cucumber
- 1 ripe avocado
- 1 small bunch cilantro, including stems
- 2 bunches spinach (or ½ of a 1lb bin of prewashed baby spinach)
- 1 ½ cups chopped honeydew or watermelon
- Juice of 2 lemons
- ½ cup lime juice
- ½ cup coconut aminos
Whirl all ingredients in a food processor.
Serve chilled or at room temperature.
